Gibilmoro Merlot

Origin and vineyard
Gibilmoro is made from Merlot grapes grown in the Pepita vineyard, approximately 520 meters above sea level. Production is approximately 70 quintals per hectare, and the harvest takes place between August 26th and 31st.

Winemaking
Maceration lasts 18 days in contact with the skins. The wine then ages for six months in 225-liter oak barriques and for another six months in bottle, acquiring structure, elegance, and complexity.

Organoleptic characteristics
With an alcohol content of 14% vol., it features an intense, impenetrable ruby red color. On the nose, it releases aromas of Mediterranean fruit, berries, and mulberry. On the palate, it is velvety, harmonious, and persistent, with balanced and well-integrated tannins.

Food pairings
It pairs particularly well with pork belly cooked at a low temperature with honey, saffron potato cream, double-textured onion and mayonnaise.
